Oil millers for a day

The historic Paolocci family mill has been in the centre of Vetralla since the early 1900s. The mill presses several varieties of olives and produces four types of certified oil: DOP Tuscia (certifying the local origin of the olives and the mill), Organic, Classic and Kosher.

Tuscia’s extra-virgin olive oil, protected by the DOP Tuscia designation, comes from groves grown on volcanic soils. Stepping into a historic mill means following the olive from harvest to pressing, up to the guided tasting that reveals its aromas and bitterness.
